Perós Un-Cheesecake

Pie Shell:
1 1/4 cup graham cracker crumbs
1/3 cup vegan margerine

Grind up graham crackers in blender. In a bowl, mix margerine and crumbs. Press into 8 inch pie pan. Keep in freezer until needed.

Filling:

2 10.5 oz blocks silken tofu
1/2 cup honey
3 Tb plus 1 tsp fresh lemon juice
1 1/4 tsp vanilla
3 Tb vegetable oil
1 Tb plus 1 tsp lemon peel, shredded

Mix all ingredients in blender until smooth. Pour mixture into pie shell and bake at 350 degrees for 1 hour. Cool and chill before serving.
