Barbequed Tofu Sandwich

1 lb. firm tofu
1 15 oz. can tomato sauce or paste
1 onion
2 Tb cooking oil for sauce
1/2 cup cooking oil for tofu
1/4 cup vinegar
1 Tb sugar
1/4 tsp redhot pepper
2 tsp salt
2 tomatoes
lettuce
8 slices of bread or 4 French rolls

Chop the onion as finely as you can. Heat the sauce oil in a frying pan on high heat. When hot, add the onion and cook until onion is brown and slightly burned. Add sugar, tomato sauce, vinegar, salt, and redhot pepper. Taste and adjust for flavor by adding more pepper, salt and vinegar until sauce is hot, salty and tangy.

In another frying pan (cast iron or non-stick work great here), heat oil on medium high heat. Slice tofu so that it is in slabs that are 1/2 inch thick. Fry tofu in oil until it is golden brown. Then flip without allowing crispy tofu to fall off and fry other side until brown. When done, immerse tofu in sauce.

Slice tomatoes, wash lettuce and toast french rolls or bread. Spread extra sauce on bread and pile high with tofu, tomatoes and lettuce. Feeds 2 with 2 sandwiches each. Sauce can be made in greater quantity and saved in refrigerator for quicker meals.
